A middle eastern favorite that is healthy and easy!
Ingredients
- 6 eggs
- 6- plum tomatoes
- 1 large onion
- 3 cloves of garlic minced
- 1 large bell pepper
- 1 cup of spinach-(optional)
- 1 tsp of cumin powder
- 2 tsp of coriander powder
- 1 tsp of cayenne or red chili flakes –(optional)
- 1-3 TB of Olive oil
- 1 bunch cilantro or parsley
Instructions
- Peel Onion and thinly slice onions.
- Cut bell peppers into thin slices as well.
- Dice tomatoes into small cubes.
- In a separate pan pour oil and sauté the onions till translucent.
- Add the bell peppers, garlic, cumin, cayenne and coriander. Sauté for a minute or two. (make sure the added spices don’t burn, so make sure there is enough oil)
- Then add the finely diced tomatoes. Cook till the tomatoes become mushy.
- There should be enough liquid from the tomatoes to cook the eggs. If not add a tablespoon or more of water to the mixture.
- Add spinach now if using it.
- Crack the whole eggs after making six nests in the mixture to encase them.
- Top the mixture with cilantro and close the lid and let the eggs cook.
- Remove and serve with pita bread or French bread!!
