Lentils are rich in minerals and carbohydrates and come with high proteins and very low in fat and high in fiber! protein, low in fat, high in fiber. A perfect meal for bariatric patients they are low in calories about 116 in calories per serving.
Let overs can be frozen in a freezer for another day! And a perfect winter/spring meal!
Ingredients:
- 2 cups dry lentils
- 1 medium size onion chopped
- 1 cup chopped carrots
- 1 cup chopped celery
- 4 cloves garlic minced
- 1 tsp cumin
- 1 tsp paprika
- 2 Tb of olive oil
- 2 can of chicken broth or vegetable broth-(optional) if you need more flavour this is definitely a flavor enhancer
- 1 tsp of fresh lime juice
Method:
Sauté the Onions , carrots, celery and garlic . after 3 minutes on medium heat in 2 Tb of olive oil. Add the lentils and sauté for 2 mins. Add 2 cans of water or broth and then stir in the cumin and paprika. Add more water if needed. when lentils are fully cooked after 30 minutes or 45 minutes on medium heat. Check salt -sometimes the chicken broth or vegetable broth will have enough salt if not add ½ tsp or so.
