Heaven in 1 dish!
Ingredients
- 1 Lb. of salmon slices
- 1 small tub of low fat sour cream (make sure it is low fat)
- 1 cup of chicken stock
- ¼ onions diced small
- 2-3 cloves of garlic minced
- 1 TBSP of white wine vinegar
- 1 tsp of paprika
- A generous amount of parsley fresh cut up or minced finely
- 2-3 TBSP of basil if fresh minced – or 1 tsp of dried basil
- 5 cherry tomatoes’ sliced into halves
Instructions
- Wash salmon slices and leave aside- by patting them dry
- Add a Tbsp. of olive oil and sauté the onions and garlic. When it turns slightly brown remove from fire.
- Leave aside add the Fish pieces and sauté it on both sides very lightly.
- Add the onions and garlic back and add the chicken stock and let it simmer.
- Add the white wine vinegar, paprika, basil and the tomatoes and let it simmer for another 5-7 minutes, with the lid closed.
- Add the chopped parsley.
- Beat the sour cream with 2 Tbsp of water and stir in the sour cream.
- Add salt and turn the stove off.
- Wash salmon slices and leave aside- by patting them dry
