Heaven in 1 dish!

Ingredients

  • 1 Lb. of salmon slices
  • 1 small tub of low fat sour cream (make sure it is low fat)
  • 1 cup of chicken stock
  • ¼ onions diced small
  • 2-3 cloves of garlic minced
  • 1 TBSP of white wine vinegar
  • 1 tsp of paprika
  • A generous amount of parsley fresh cut up or minced finely
  • 2-3 TBSP of basil if fresh minced – or 1 tsp of dried basil
  • 5 cherry tomatoes’ sliced into halves

Instructions

  • Wash salmon slices and leave aside- by patting them dry
  • Add a Tbsp. of olive oil and sauté the onions and garlic. When it turns slightly brown remove from fire.
  • Leave aside add the Fish pieces and sauté it on both sides very lightly.
  • Add the onions and garlic back and add the chicken stock and let it simmer.
  • Add the white wine vinegar, paprika, basil and the tomatoes and let it simmer for another 5-7 minutes, with the lid closed.
  • Add the chopped parsley.
  • Beat the sour cream with 2 Tbsp of water and stir in the sour cream.
  • Add salt and turn the stove off.
  • Wash salmon slices and leave aside- by patting them dry
