Bariatric Friendly!

Ingredients (with chicken or without)

  • Serves -4
  • 2 cups of chicken stock-(low sodium chicken broth)-or vegetable stock
  • 2 chicken breasts (if desired)
  • 1 pkg. of noodles – (Angel hair or Chinese noodles –rice sticks)
  • 1 cucumber cut into small cubes
  • ½ onion chopped fine
  • ½ cup of spinach
  • 1 bunch of green onions
  • ½ bunch of cilantro
  • Any frozen or fresh vegetables –beans cauliflower, carrots
  • 1/3 inch fresh ginger root

Instructions

  • Boil the noodles separate –in a different pan.
  • Cook the chicken in some water and use the water for the soup.
  • Remove cooked chicken and strain the chicken stock through a sieve for a clear soup.
  • Remove the chicken and slice the chicken.
  • Add the stock to the clear broth –then add some chopped onions, when the broth starts to boil add the vegetables and wait keep the vegetables for a minute on the fire, cover with lid. Turn the stove off and let the vegetable cook in the steam.
  • Pour the soup or the broth into individual bowls and add some noodles and arrange the vegetables and the sliced chicken on the side – garnish with chopped fresh ginger root-(note that recent sleeved or by passed patients need to be very cautious when trying hot spicy food!)-Add some hot sauce if desired only.

This Vietnamese style soup can be made purely vegetarian or with chicken. A healthy, fast meal that is bariatric friendly. For easy digestion the chicken can be cut very small and almost minced .
