A middle eastern favorite that is healthy and easy!

Ingredients

  • 6 eggs
  • 6- plum tomatoes
  • 1 large onion
  • 3 cloves of garlic minced
  • 1 large bell pepper
  • 1 cup of spinach-(optional)
  • 1 tsp of cumin powder
  • 2 tsp of coriander powder
  • 1 tsp of cayenne or red chili flakes –(optional)
  • 1-3 TB of Olive oil
  • 1 bunch cilantro or parsley

Instructions

  • Peel Onion and thinly slice onions.
  • Cut bell peppers into thin slices as well.
  • Dice tomatoes into small cubes.
  • In a separate pan pour oil and sauté the onions till translucent.
  • Add the bell peppers, garlic, cumin, cayenne and coriander. Sauté for a minute or two. (make sure the added spices don’t burn, so make sure there is enough oil)
  • Then add the finely diced tomatoes. Cook till the tomatoes become mushy.
  • There should be enough liquid from the tomatoes to cook the eggs. If not add a tablespoon or more of water to the mixture.
  • Add spinach now if using it.
  • Crack the whole eggs after making six nests in the mixture to encase them.
  • Top the mixture with cilantro and close the lid and let the eggs cook.
  • Remove and serve with pita bread or French bread!!
